Its a quick and easy to prepare meal. It takes some time to develop the taste for Tofu, But you will like this recipe. You can add the vegetables as per your choice. I usually prepare the Tofu with Spinach and Broccoli. This dish is completely Vegan, Plant based and Gluten Free.
Ingredients:
- 1-2 packages tofu
- 1 tablespoon Groundnut Oil or oil of your choice
- 2 tablespoons low-sodium soy sauce
- 1 small bunch green onions — finely chopped
- Spinach
- 2 tablespoons toasted sesame seeds
Getting it done:
- Wash and Drain the tofu. Press down on the tofu lightly to squeeze out excess moisture. Cut the tofu into 3/4-inch cubes.
- In a large non-stick, heat the oil over medium-high heat. Once the oil is hot but not smoking, add the tofu and soy sauce. Sauté, stirring every minute or so until the tofu is nicely coloured on all sides and the moisture has cooked off, 8 to 10 minutes. Add the spices as per choice and availability.
- Add spinach. It will seem like huge amount at first but will cook down Slowly. Stir in the sesame seeds. Remove from the heat. Sprinkle the green onions over the top.
- Serve hot, with brown rice, noodles, or whatever you like, along with additional soy sauce and chili paste or flakes to taste if required.
