Zucchini Fritters






If your kitchen and Garden is Full of Zucchini, You can try this Recipe. Zucchini fritters are best starter and served as a side dish. Serve them with green salad, hummus or Tahini.

Quick, easy and perfect Vegan light snack meal. They are best served hot, crispy and fresh. But if you do have leftovers, keep them in the fridge for up to 3 days and warm them up by giving them a quick re-fry in a hot pan
Ingredients:
- 3 cups grated zucchini
- 1 cup (125g) All Purpose Flour
- 1 cup chopped Green Onions
- 1/2 tsp Crushed Garlic
- 1 and 1/2 tsp salt
- 1/2 tsp ground black pepper
- 2 cloves garlic, minced
- Oil for frying
- You can also add shredded Carrots, cabbage or lettuce to add more color and flavors
Getting it done:
- Wash zucchini and trim off ends. Grate Zucchini. Place zucchini in a large mixing bowl, stir in salt and set aside for 10 minutes.
- The salt will help release the excess water from the zucchini. Then squeeze the zucchini and drain off excess water. Place the squeezed zucchini into another bowl
- In Zucchini mixing bowl, add in the flour, crushed garlic, cloves, chopped spring onions and grounded black pepper and mix together.
- Mix together until you have a Thick batter. Set aside.
- Heat oil over medium heat in a large nonstick pan. Once the oil is hot, add the zucchini mixture with scoop or tablespoon on the pan and flatten out the tops slightly to make them pancake shaped. Sauté 3-5 minutes per side or until golden brown.
- Let it cook for a few minutes and then flip over – around 3 minutes per side. When both sides are nicely browned, then transfer to plate
- Serve with salad or soup with Hummus, Tahini and chopped spring onions.
